Memorial Day marks the unofficial start of summer in the Hamptons—New York’s favorite seasonal escape. If you’re heading down Route 27-A this summer, here’s a look at the new restaurants, hotels, and shops you’ll find along the way. A beloved East Hampton landmark is getting a fresh start under new ownership, while Sagaponack’s historic general store is making a stylish comeback.
Here’s what’s new in the Hamptons for summer 2025:
### Hotels
The Hedges Inn
One of the most exciting updates this season is the revival of The Hedges Inn, a charming 19th-century colonial hotel in East Hampton. Andrew and Sarah Wetenhall, the owners of Palm Beach’s famed Colony Hotel, are taking over with plans for subtle renovations this summer and a larger revamp in 2026. “We want to create a welcoming space where guests can enjoy the classic East Hampton experience—luxury with a sense of tradition and community,” Sarah Wetenhall shared.
The Sagaponack
Nestled along Route 27-A in Wainscott, this new hotel replaces the property that once stood on the site. Guests can choose between rooms in the main inn or private bungalows, complete with a cocktail bar for crafting summer drinks. There’s a pool on-site, but the beach is just a quick bike ride away.
### Restaurants
Swifty’s
The Upper East Side’s beloved Swifty’s—once a hotspot for New York’s elite before closing in 2016—is reopening inside The Hedges Inn. Serving breakfast, lunch, and dinner, the menu features classics like Maryland crab cakes, chilled lobster salad, and meatloaf, with ingredients sourced from local farms.
Camp Rubirosa
New York’s acclaimed Rubirosa pizzeria is going rustic with a seasonal pop-up in East Hampton. Expect their signature thin-crust tie-dye pizza and house-made pastas in a playful summer camp setting—complete with tents.
Wayan
Cédric and Ochi Vongerichten’s French-Indonesian restaurant is setting up at E.H.P in East Hampton, serving dishes like crab fried rice and black sea bass on a deck overlooking Three Mile Highway. This follows their recent expansion to Aspen.
Bagatelle
The glamorous dinner-to-party restaurant—with locations in St. Barths, St. Tropez, and Courchevel—is opening at Montauk Marina this summer. While the exact date is still under wraps, expect Champagne celebrations by the Fourth of July.
### Stores
Sagaponack General
The iconic Sagaponack General Store is back after a much-publicized renovation. New owner Mindy Gray has preserved its nostalgic charm, complete with penny candy, rotisserie chickens, and shelves made from reclaimed wood from the original store.
Bonbon
This Swedish candy shop is opening near Main Street in Sag Harbor, offering sour gummies, marshmallows, and other sweet treats for kids (and adults) of all ages.
